Cinnamon & Raisin Cookies

A perfect recipe for bake sales and other fundraisers and really straightforward to make. These tasty cookies are guaranteed to be a hit with everyone.
75g / 3oz margarine
55g / 2oz castor sugar
100g / 3.5 oz soft brown sugar
1 free range egg
1 tsp vanilla essence
100g / 3.5oz raisins (chopped)
175g /6oz self-raising flour
2 tsp ground cinnamon
½ tsp bicarbonate of soda
pinch of salt
Place all the ingredients in a mixing bowl and beat together with a wooden spoon
Place teaspoons of the mixture onto a greased baking tray brushed with oil
Bake in the middle of a pre-heated oven at 190 C 375F for 8 – 10 minutes.
Cool the cookies on a wire tray
