Marshmallow Muffins

We did these for the school fete last year and the kids really loved them. You can now get bags of tiny marshmallows but its cheaper to buy the normal size and cut them up with a pair of scissors.

85g / 3oz Butter
100g / 3 ½ oz Mini marshmallows
225g / 8oz Plain flour
55g / 2oz Cocoa powder (we always use the fairtrade type)
1tbsp Baking powder
115g / 4oz Soft light brown sugar
2 Eggs
250ml / 9 fl oz Milk
Pinch of salt

Sift the flour, salt, cocoa and baking powder together in a large bowl. Stir in the sugar and marshmallows cut small. Make a well in the centre.

Mix the milk and eggs in a jug.

Pour into the middle of the dry ingredients and stir quite gently until they are combined. You don’t want to over-mix them.

Spoon the mixture into a greased muffin tin. Use a normal size tin not those great big ones you can get.

Bake in a pre-heated oven 200 C / 400 F for about 20 mins. They should rise and be firm to touch to show they are ready.

Turn them out onto a wire rack.

You might have to charge a little more for these than other cakes due to the cost of the marshmallows but we sold every single one.
